Just Add Mustard

Mustard is one of the most versatile spices in the world. Aside from its distinctive flavour and nutritional values, it serves a number of very functional roles as an ingredient such as an emulsifier, an antioxidant, a stabilizer, a preservative, and a binder.

As mustard contains almost 30% protein, it also serves well as a protein source. It is an essential ingredient that adds flavour and texture to much of what we consume.

Depending on the application, the use of mustard will improve colour, flavour and stability of the emulsion.
