By using a blend of deactivated mustard and water, it is possible to match the viscosity and thixotropic properties of tomato paste. The mixture can then replace up to 10% of the total tomato paste in the formula. Due to its high liquid absorption capacity, mustard is used to increase smoothness and texture.
